One of the most important factors when it comes to guaranteeing a constant, high quality of food and drinks is the viscosity which plays an important part at many stages throughout the production process. Very basically, the viscosity determines how “thick” a product is, i. e. whether it is aquaeous or rather pasty.
The flow properties and the viscosity of food are mostly dependent on the adhesive properties of the starch contained. The characteristics of starch depend on the temperature as well as the environment. For example, rising temperatures lead to a solidifying effect of starch whereas it has a liquefying effect when it is boiled. When cooling down again, it will have a solidifying effect again. These conditions are characterised by viscosity.

A rotational viscometer measures the mechanical resistance of a liquid which acts against the rotational movement of a spindle.
