Viscometers in Modern Food Production and Processing

PCE viscometer used in laboratory                    Viscosity meter with accessories in carrying case

In the food sector, the ever-increasing demands of the end customers make all professionals involved face challenges. One of the most important factors when it comes to guaranteeing a constant, high quality of food and drinks is the viscosity which plays an important part at many stages throughout the production process. Very basically, the viscosity determines how “thick” a product is, i. e. whether it is aquaeous or rather pasty.

The flow properties and the viscosity of food are mostly dependent on the adhesive properties of the starch contained. The characteristics of starch depend on the temperature as well as the environment. For example, rising temperatures lead to a solidifying effect of starch whereas it has a liquefying effect when it is boiled. When cooling down again, it will have a solidifying effect again. These conditions are characterised by viscosity.

Viscosity measurement with quick and highly accurate results does not have to be expensive. PCE Instruments offers viscometers for various applications at very favourable prices. The most common type of viscosity meter you can find at PCE Instruments is the rotational viscometer. A rotational viscometer measures the mechanical resistance of a liquid which acts against the rotational movement of a spindle. The torque with regards to the spindle geometry is what makes the viscosity reading.

The most important facts and figures about three of PCE’s viscometers suitable for use in food processing can be found in the following:

Principle of Brookfield / Newtonian fluids / measures viscosity of printing inks, lacquers, pastes, groceries etc.
